I'm sorry to even mention electrical wiring - the most bandied topic.
I'll be quick. I don't have copy of NEC and need a simple answer. I
ran feed to my shop - single wire THHN insulation inside of PVC conduit
on the outside wall of the house. I am having the siding replaced with
hardi-plank. The builder suggested re-routing the wiring inside the
soffet and getting rid of the ugly old conduit, since he is replacing
the soffet anyway.
Can I run individual wires inside walls/ceiling without conduit and
meet NEC?

May, I wasn't clear. I'm not running new wire. Its already run and I
don't want to replace it. I'll leave it in the conduit on the outside
of the house if I have to. The builder will move it inside the wall at
no charge, if I let him take it out of the conduit. I just need to
know if that meets code.

No. You need conduit of some sort (note that there's a maximum conduit
fill) or cable approved for the use. NM (non-metalic sheathed) cable
like Romex would be least expensive if the cable never leaves the wall.

Ever hear of knob & tube wiring?
Been around probably close to 100 years.
Probably hasn't been used for at least 40 years except in areas where
electrical unions were able to enforce feather bedding labor contracts which
was the case in Cleveland during the early 60's.
Today, if you are going to run it inside the eaves, use BX and sleep tight.
