Thank for the informed (!) reply. Spraying a finish is out. Therefore, I am going to use a standard fast dry poly, 2 coats either oil or waterbourne. To protect the bar I am going to build a temporary plywood top that rests on the top rail and has lips, which will hold it in place, that drop into the drink tray and over the outside of the top rail. I will leave this in place for 24 hours with a small fan at one end to move air through space between the false top and the refinished bar top to allow the finish to dry.
